Using over ripe bananas for banana bread instead of throwing them away is a tradition probably dating back to the depression and its “waste not want not” mentality. I’m so glad that we think that way.
I for example did not like bananas as a child – but loved banana bread. I didn’t like avocados either – so it may have been a texture thing.
The banana bread recipe below was created by a dear friend of mine, who was a chef. He ended up passing at a very young age but not before leaving a legacy of tried and true recipes including this Award Winning Banana Bread Recipe.
Award Winning Banana Bread Recipe
½ c oil
½ c sugar
2 eggs beaten
2 c flour
½ tsp. soda
1 tsp. baking powder
½ tsp. salt
1 c mashed bananas
1/3 c milk
½ c walnuts – optional
Stir all together with a fork. Spoon into bread pan. Bake at 375 for 45-60 min. Makes one loaf
